New techniques of food preparation and preservation allow caterers, Norman chefs and large-scale food processing companies to offer their gastronomic specialties to a larger sector of the population. These specialties include the following dishes: Tripe à la mode de Caen (Caen-style tripe), ready-to-eat meat and fish dishes, a wide variety of mixed salads and meat and fish pâtés (called "merrines").
